1 Crown Jewels Zucchini (cut into 1/4-inch slices)
1/2 Cup Seasoned Bread Crumbs or Panko Bread Crumbs
1/2 Cup Grated Parmesan Cheese
1 Teaspoon of Garlic Salt
5 Tablespoons of Olive Oil
1 Cup Shredded Mozzarella Cheese
1 Cup of Your Favorite Dipping Sauce
Mix together the bread crumbs, grated Parmesan cheese, and garlic salt into a bowl.
Beat the 2 eggs together in a second shallow bowl.
Heat the olive oil in a large skillet over medium heat until the olive oil is rippling but not smoking.
Dip the Crown Jewels Zucchini slices into the beaten egg, then into the crumbs, and place in the skillet in a single layer.
Fry the zucchini slices for about 2-3 minutes or until golden brown on each side.
Once you remove the zucchini from the pan, place on a plate and sprinkle the mozzarella cheese over the slices, allowing the cheese to melt.
Once done, serve on a plate with your favorite dipping sauce and enjoy!
