1 1/4 Cups of Water
1 Cup Uncooked White Rice (sushi rice)
3 Tablespoons Rice Vinegar
1 Pinch of Salt
4 Sheets Nori (dry seaweed)
1/2 Crown Jewels Cucumber (sliced into thin strips)
1 Avocado - optional (peeled, pitted, & sliced)
*Side note: this recipe requires a bamboo sushi mat
Combine water and rice into a saucepan and bring to a boil. Cover, reduce heat to low and simmer for 20 minutes, water should be absorbed.
Remove saucepan from heat and stir in the vinegar and pinch of salt. Then set aside to cool.
Cover your bamboo sushi mat with plastic wrap to keep rice from sticking. Place one sheet of Nori (seaweed) over the plastic.
Using your hands, spread the rice evenly onto the sheet, leaving about a 1/2 inch of Nori empty at the bottom.
Arrange strips of the Crown Jewels Cucumber and Avocado (if you want) across the center of the rice.
Lift the mat and roll over the vegetables once and press down. Unroll, then roll again towards the exposed end of the Nori sheet.
Set aside and repeat the process with the remaining ingredients.
Take a sharp knife and wet it to slice rolls into 5-6 slices and serve.
