Ingredients:
2 Crown Jewels Eggplant
7 Crown Jewels Roma Tomatoes
2 Crown Jewels Yellow Squashes
2 Crown Jewels Zucchinis
1 Crown Jewels White Onion
1 Crown Jewels Red Bell Pepper
1 Crown Jewels Yellow Bell Pepper
2 Tbsp. Olive Oil
2 Garlic Cloves
Flaky Salt
Pepper
Spices: Basil, Parsley, Thyme
Directions:
Preheat the oven for 375 Degrees Fahrenheit.
Slice the Crown Jewels Veggies (2 Eggplant, 6 Tomatoes, 2 Squash, 2 Zucchini) into 1mm-thick rounds.
Heat 2 Tbsp. of Olive oil in a pan. Sauté the Crown Jewels White Onion, Garlic (finely minced), and Yellow / Red Crown Jewels Bell Peppers until soft.
Crush 1 Crown Jewels Roma Tomato and add to the sauté veggies.
Stir until the ingredients are properly incorporated and season with Salt and Pepper
Poor the sauce into a oven safe pan.
Arrange the sliced veggies in alternating slices on top of the sauce, starting from the outer edge into the center of the pan.
In a small bow, mix together Basil, Thyme, Parsley, Salt, Pepper and Garlic.
Sprinkle the herb mixture over the veggies.
Cover the pan with foil and bake for 40 min. Uncover, then bake for another 20 min. until the veggies are soft.
