Baked Stuffed Onion

Ingredients:
6 Crown Jewels Onions
Hazelnuts ( or any nuts of your liking)
8 Sun-Dried Tomatoes
Vegetable or Beef Broth
Swiss Cheese
Feta Cheese
Couscous
Chili Flakes
Fresh Mint
Salt and Pepper
Directions:
Chop the top of 6 Crown Jewels Onions and wrap each one in foil.
Bake at 180 Degrees Celsius for one hour. Unwrap and let them cool.
Place 100g of Hazelnuts on a baking tray and roast for 5 minutes.
Bring 750ml of Vegetable Broth to boil in a saucepan and add 100g of Couscous. Simmer for 8 minutes. Drain and set aside.
Finely chop the roasted Hazelnuts, 8 Sun-Dried Tomatoes and Feta Cheese.
In a large bowl, mix the finely chop mixture, Couscous, Fresh Mint and sprinkle Chili Flakes, Salt and Pepper.
Remove the skin of the Crown Jewels Baked Onions. Scoop out the center, leaving two layers to stuff. Chop finely and add the discarded onion insides to the stuffing mixture.
Fill each Crown Jewels Onion with stuffing mixture, ensure they are packed full and place them back in baking tray. Sprinkle a generous amount of Swiss Cheese.
Bake for 15 minutes until browning on top.
