Baked Parmigiano Zucchini


Serving Size: about 50 Zucchini Coins

Total Time: 12 min


Ingredients:

  • Crown Jewels Zucchini (about 6 small)

  • Olive Oil (2 Tbsp.)

  • Parmigiano Reggiano

  • Garlic Cloves (2 finely minced)

  • Italian Seasoning (1 1/2 tsp)

  • Fresh Parsley, Thyme, Basil, Oregano, Rosemary

  • Flaky Salt

  • Pepper

Directions:

  • Slice 6 Crown Jewels small Zucchinis into 1/2-inch thick rounds.

  • Preheat oven to 350 degrees and line a rimmed baking sheet with aluminum foil.

  • In a small mixing bowl, stir together 2 tbsp. Olive Oil, 2 Garlic Cloves, 1 1/2 Italian Seasoning, Salt and Pepper.

  • Place Zucchini rounds into a larger mixing bowl. Pour the Oil mixture and toss well until evenly coated.

  • Pour the coated Zucchinis onto baking sheet, then spread out into a single layer.

  • Top with a generous amount of Parmigiano Reggiano.

  • Bake for 12 minutes.

  • Coat with Italian Seasoning: Thyme, Basil, Oregano, Parsley, Rosemary.

  • Enjoy.
