Baked Parmigiano Zucchini

Ingredients:
Crown Jewels Zucchini (about 6 small)
Olive Oil (2 Tbsp.)
Parmigiano Reggiano
Garlic Cloves (2 finely minced)
Italian Seasoning (1 1/2 tsp)
Fresh Parsley, Thyme, Basil, Oregano, Rosemary
Flaky Salt
Pepper
Directions:
Slice 6 Crown Jewels small Zucchinis into 1/2-inch thick rounds.
Preheat oven to 350 degrees and line a rimmed baking sheet with aluminum foil.
In a small mixing bowl, stir together 2 tbsp. Olive Oil, 2 Garlic Cloves, 1 1/2 Italian Seasoning, Salt and Pepper.
Place Zucchini rounds into a larger mixing bowl. Pour the Oil mixture and toss well until evenly coated.
Pour the coated Zucchinis onto baking sheet, then spread out into a single layer.
Top with a generous amount of Parmigiano Reggiano.
Bake for 12 minutes.
Coat with Italian Seasoning: Thyme, Basil, Oregano, Parsley, Rosemary.
Enjoy.
