Baba Ghanoush


Serving Size: Generous Bowl

Ingredients:

  • 2 Crown Jewels Eggplant

  • 1 Garlic Clove

  • 1 Lemon

  • Olive Oil

  • Tahini

  • Parsley

  • Chili Flakes

  • Sesame Seeds

  • Flaky Salt and Pepper

Directions:

  • Preheat oven for 375 Degrees Fahrenheit.

  • Place 2 Crown Jewels Eggplants on a parchment lined sheet tray and roast them for 15 minutes for both sides. When the skin is burnt and the inside is soft, it is ready.

  • Mince one Garlic Clove. In a pan heat 1/4 Olive Oil and add 1 Tbsp. of the Garlic.

  • Slice the Crown Jewels Eggplants in half and scoop out the soft flesh.

  • In a blender, place the Eggplant soft flesh, the Garlic Oil, the rest of the raw Garlic, the juice of 1 Lemon, 2 Tbsp. of Tahini, and Flaky Salt. Blend until smooth.

  • Taste Test! adjust any flavor you would like more of.

  • Transfer into a bowl and top it with Olive Oil, Toasted Sesame Seeds, Chili Flakes and more Parsley.
