Ingredients:
2 Crown Jewels Eggplant
1 Garlic Clove
1 Lemon
Olive Oil
Tahini
Parsley
Chili Flakes
Sesame Seeds
Flaky Salt and Pepper
Directions:
Preheat oven for 375 Degrees Fahrenheit.
Place 2 Crown Jewels Eggplants on a parchment lined sheet tray and roast them for 15 minutes for both sides. When the skin is burnt and the inside is soft, it is ready.
Mince one Garlic Clove. In a pan heat 1/4 Olive Oil and add 1 Tbsp. of the Garlic.
Slice the Crown Jewels Eggplants in half and scoop out the soft flesh.
In a blender, place the Eggplant soft flesh, the Garlic Oil, the rest of the raw Garlic, the juice of 1 Lemon, 2 Tbsp. of Tahini, and Flaky Salt. Blend until smooth.
Taste Test! adjust any flavor you would like more of.
Transfer into a bowl and top it with Olive Oil, Toasted Sesame Seeds, Chili Flakes and more Parsley.
